Super Easy Plant Based Pizza!

Hey guys, I thought I would update the site with a really quick and easy pizza recipe. This recipe is a family favourite and is often the perfect go-to weekend pizza! It is also really tasty and you can adapt the recipe to suit you. If you are making it for a meat eater you can also use free range chicken. But I find often that it tastes so good that meat-eaters don’t seem to mind the tofu substitute! You can also make it with potato instead of tofu (just make sure you give it a bit of a pre-cook and boil the potato for a little while before you cube it and pop it on the pizza).

Pizza Ingredients:

x2 Your favourite pre-made pizza bases (I am still working on a vegan base recipe once I have a good one I will update this page with it). We usually buy a GF sourdough version.

x1 Large tub of plain hummus (If I am saving time we buy the Lisa’s brand otherwise I will quickly whip up my own hummus with x2 cans of chickpeas plus the juice from one can and some salt and pepper and a dash of oil, you can also add some lemon if you have some on hand).

A large handful of spinach or baby kale leaves.

A handful of white button mushrooms.

x1 Block of tofu (We currently buy the Tonzu organic brand ‘firm style’).

x1 tablespoon tandoori paste (We use the Patak’s brand).

Vegan cheese to sprinkle on top (optional, we often don’t bother with this and it still tastes good).

Topping Ingredients:

x2-3 chopped tomatoes.

1/2 an onion (you can also use red onion if you wish).

Dash of white vinegar.

Dash of oil (we use rice bran but olive oil is also nice).

Salt and pepper to taste.

Method:

Spread a generous helping of hummus on to each pizza base (If I am using the large Lisa’s tub then I will use the whole lot).

Top with baby spinach/kale.

Top with sliced mushrooms.

Chop up the tofu into small cubes and then place in a bowl with the tandoori paste (if you prefer to have your tofu really mild you can mix a teaspoon of tandoori paste in with a tablespoon of yoghurt first).

Spread tofu on top of the pizza then top with your favourite cheese.

Bake in the oven for around ten minutes until well cooked.

While the pizza is cooking I usually make the fresh tomato and onion topping and mix it thoroughly together in a bowl.

When the pizza is cooked you can add a tablespoon of topping on to each slice before serving.
